As outlined by the European “Farm to Fork” strategy, the production process is fully traced, controlled, and supervised by health authorities, resulting in a final product that is of high quality and safe for the consumer.
Our efforts to ensure traceability are reflected in the development, implementation, and continuous improvement of ÍTACA (Identification, Traceability, and Quality System).
Traceability System ITACA
Ibérico Ham is a product with centuries of tradition in its production, and it is also part of a sector that reinvents itself every day to always offer the highest quality in its products.
In its commitment to innovation and digitalization as a driving force for necessary change to provide reliability, transparency, and trust to consumers when making their purchase, the Iberian sector, in collaboration with ASICI, has launched ÍTACA (Identification, Traceability, and Quality System). This integrative digital system contains the complete traceability of Iberian productions, “from field to fork,” thanks to the efforts of sector operators who record specific and detailed information of their professional activity on the system daily.
The system has become a rigorous source of information, providing near real-time, accurate, and reliable data on key production indicators. This enables Ibérico sector operators and organizations to make better strategic decisions.

Labels

Because not all Ibérico Hams are the same, a color-coded label system has been established to help you instantly identify the type of Ibérico Ham in front of you.
The consumer just needs to pay attention to the label —whether it belongs to the Iberian Quality Standard (featuring the ASICI logo) or a Protected Designation of Origin (with the corresponding DOP logo)—and its color to determine the category of Ibérico Ham they are purchasing.
There is no room for doubt. Only Ham or Picnic Shoulders which bear a seal—whether from the Iberian Quality Standard or a DOP—are truly Iberian. The traceability of DOP products is managed by their respective Regulatory Councils, and in addition to the seal, they also carry a label identifying them as a protected DOP product.
The key lies in its label—each color, a category: Black, red, green, and white—four colors, four different categories of Ibérico Ham!

Black label
The black label identifies a 100% Ibérico acorn-fed Ham. This label identifies Ibérico Pigs whose mother and father are 100% Ibérico and both registered in the Pedigree Book. Their diets during their fattening phase are based on acorn and other natural resources.
Red label
The red label indicates Ibérico Ham acorn fedpigs which are 75% or 50% Ibérico breed. Their diets during their fattening phase are based on acorn and other natural resources.
Green label
The green label represents grain-fed Ibérico pigs raised outdoors that may be 100%, 75% or 50% Ibérico breed. Their grains are based on cereals, legume and herbs.
White label
The white label identifies grain-fed Ibérico pigs raised on farms that may be 100%, 75% or 50% Ibérico breed. Their grains are based on cereals or legumes.
IBÉRICO APP

“IBÉRICO”, the app that provides consumers with traceability information about Ibérico Hams. “IBÉRICO” provides full transparency and confidence to consumers when making their purchase. It reflects the Ibérico sector’s commitment to offering the highest guarantees of quality and traceability.
By identifying each piece of Ham with a label based on Quality Standards and based on the information registered on ITÁCA, the IBÉRICO APP allows customers to check traceability of the products and verify that they meet the current regulations. This is made possible by scanning the unique and individual barcode on each Quality Standard label.
Simply scan the barcode on the label to access traceability information as well as the type of product it is, the animal’s diet and rearing conditions, its breed percentage, the vintage (month and year when the curing process began) and the autonomous community where the curing process began.
The app, which is free, easy to handle and interactive, is available on Google play for Android users and in the App Store for Apple users. Currently, it has been downloaded 34,434 times across 38 different countries, with 469,251 label scans performed by users.
The Ibérico app cannot be used to scan the labels of Ibérico Hams protected by the Denominations of Origin, as the traceability and identification of these pieces are managed by the Regulatory Councils of each DOP.
