A carefully selected diet
The unique Ibérico breed can only be fed with the best natural resources. In order to achieve such an exquisite product, the pig’s diet must be carefully selected. The result? A flavour full of nuances!
The diet the Ibérico pig receives throughout its life, along with its breed type, are the criteria used to classify the pieces of Ibérico Ham. Based on diet, three different Ibérico Ham pieces can be found:
– Acorn-fed Ibérico Ham: The pig, in its fattening phase, is fed on acorn and other natural resources found in the Dehesa.
– Grain-fed Ibérico pigs raised outdoors: The pig´s diet in its fattening phase is based on feed mainly made of cereals, grain legume and herbs.
– Grain-fed Ibérico pigs: The pig, in its fattening phase, is raised on farms and its diet consists of feed mainly made of cereals and leguminous plants.
