Cooking from the origin

Founder of Tapas Revolution and a passionate advocate for Spanish cuisine in the UK, Omar returned through this journey to the flavours that first sparked his vocation. Setting foot in the Dehesa, speaking with the farmers, and tasting Ibérico Ham in its homeland reminded him why he cooks the way he does. Because authenticity is built with time, respect, and origin.
