Ibérico Quality Standard

QUALITY STANDARD (RD 4/2014)
Royal Decree 4/2014, of January 10, approves the Quality Standard for Ibérico meat, Ham, picnic shoulder and loin, establishing the quality characteristics that Ibérico products must meet. It enhances and strengthens traceability, and introduces stricter labeling requirements to improve the information consumers receive and reinforce the products’ unique attributes.
This Standard, which has the rank of Royal Decree and is mandatory for all products using the term Ibérico, outlines provisions regarding product names, labeling, raw material sourcing, identification with seals, traceability, product processing (minimum time requirements), and control, inspection, and certification carried out by the Competent Authorities, independent inspection and certification entities accredited by ENAC (Spanish National Accreditation Entity), or, where applicable, by the Regulatory Councils of the PDOs (Protected Designations of Origin).
